About Rooibos
"Rooibos" (pronounced ROY - bus) is an Afrikaans word that means "red bush." The rooibos plant, which grows only in the Cederberg Mountains of South Africa, is a stout bush with spiny green leaves that resemble pine needles. Tea made from rooibos-or red tea-has been long-prized for its smooth, complex flavor, a high antioxidant content, and many purported healing properties. In fact, in South Africa, rooibos red tea has been used medicinally for centuries, to relieve everything from nervous tension, allergies and digestive problems to colicky babies, asthma and skin irritations.
After harvesting, rooibos leaves are bruised and then dried in the sun, a process that turns their color from green to red and intensifies their flavor. To extract its powerful antioxidant content, rooibos must be brewed for at least ten minutes.
ZT is brewed for a minimum of 30 minutes. Since red tea is naturally tannin-and-caffeine-free, this extended brewing time doesn't create a bitter aftertaste, but instead, a full, rich, complex flavor and the highest possible antioxidant content.
